Ingredients
  

  • 1 pre-made or homemade pizza dough
  • 1/8 cup cornmeal (for dusting)
  • 1 cup BBQ sauce (divided)
  • 1 1/2 cups cooked chicken breast, shredded or chopped
  • 2 cups shredded mozzarella cheese
  • 1/2 cup shredded smoked gouda cheese
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons olive oil (for brushing the crust)
  • 2 tablespoons fresh cilantro, chopped (optional garnish)

Instructions
 

  • Preheat Oven: Preheat your oven to 425°F (220°C). If using a pizza stone, place it in the oven to preheat as well.
  • Prepare Dough: On a lightly floured surface, roll the pizza dough into a circle. Sprinkle cornmeal onto a pizza pan or baking sheet, then place the dough on top.
  • Coat Chicken: In a bowl, combine the cooked chicken with 1/2 cup of BBQ sauce. Mix well to coat.

Assemble Pizza:

  • Spread the remaining 1/2 cup of BBQ sauce evenly over the pizza dough.
  • Sprinkle mozzarella cheese across the surface.
  • Add the BBQ-coated chicken evenly on top.
  • Scatter red onion slices and sprinkle smoked gouda cheese over the pizza.

Brush Crust:

  • Brush the edges of the dough with olive oil to ensure a golden, crispy crust.

Bake:

  • Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.

Garnish and Serve:

  • Remove from the oven, garnish with chopped cilantro (if desired), slice, and serve hot.
