For the crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 tablespoons granulated sugar
For the cheesecake layer:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
For the coffee cake layer:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2/3 cup sour cream
For the cinnamon streusel:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1 teaspoon cinnamon
- 1/4 cup cold unsalted butter, cubed
Preheat oven to 325°F (165°C). Grease a 9-inch springform pan and wrap the outside with aluminum foil.
For the crust: Combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan. Bake for 10 minutes, then cool.
For the cheesecake layer: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Pour over the crust.
For the coffee cake layer: Whisk together flour, baking powder, baking soda, and salt. In a separate bowl, cream butter and sugar. Add eggs and vanilla. Alternate adding the dry ingredients and sour cream. Carefully spread over the cheesecake layer.
For the streusel: Mix flour, brown sugar, and cinnamon. Cut in cold butter until crumbly. Sprinkle over the coffee cake layer.
Bake for 60 minutes or until center is almost set. Turn off oven, crack the door, and let cool for 1 hour.
Refrigerate for at least 4 hours or overnight before serving.
