Ingredients
  

  • 1 pound ground Italian sausage (hot or mild)
  • 1 cup carrots, chopped
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/4 cup all-purpose flour
  • 6 cups chicken broth
  • 1 (6-ounce) can tomato paste
  • 1 cup heavy cream
  • 1 (9-ounce) package three-cheese tortellini (fresh or frozen)
  • 3 cups kale, chopped
  • Salt and freshly ground black pepper, to taste

Instructions
 

Sauté the Sausage and Vegetables:

  • In a large pot over medium-high heat, add the ground Italian sausage. Cook, breaking it apart with a spoon, until browned and cooked through.
  • Remove the sausage with a slotted spoon and set aside on a plate.
  • In the same pot, add the chopped carrots and onion. Sauté until the vegetables are tender, about 5-7 minutes.
  • Add the minced garlic and Italian seasoning to the vegetables and sauté for an additional 1 minute until fragrant.

Create the Soup Base:

  • Sprinkle the flour over the sautéed vegetables and stir well to combine, cooking for about 1-2 minutes to eliminate the raw flour taste.
  • Gradually pour in the chicken broth, stirring constantly to prevent lumps.
  • Add the tomato paste and stir until fully incorporated into the broth.

Simmer the Soup:

  • Return the cooked sausage to the pot.
  • Pour in the heavy cream and stir to combine.
  • Bring the soup to a simmer over medium heat.

Add Tortellini and Kale:

  • Once the soup is simmering, add the three-cheese tortellini.
  • Cook for about 7 minutes, or until the tortellini are tender and cooked through.
  • Stir in the chopped kale and let it wilt for about 2-3 minutes.

Season and Serve:

  • Taste the soup and season with salt and freshly ground black pepper as needed.
  • Serve hot, garnished with freshly grated Parmesan cheese if desired.
