- 3 pounds Chicken, cut into pieces
- 6 cups Chicken broth
- 2 cups All-purpose flour
- 1 tbsp Baking powder
- 1/2 tbsp Salt
- 3 tbsp Butter, cubed
- 3/4 cup Milk
- 2 tbsp Fresh parsley, chopped
In a large pot, combine the chicken and chicken broth. Bring to a boil, then reduce to a simmer for 30 minutes, or until the chicken is cooked through.
Remove chicken from the broth and set aside. Shred or chop the chicken into bite-sized pieces.
Whisk the flour, baking powder, and salt in a medium mixing bowl until combined. Mix in the butter until the mixture resembles coarse crumbs. Pour in the milk and combine until a sticky dough forms.
Drop the dough by heaping tablespoonfuls into the simmering broth. Reduce heat to medium-low, cover, and cook for 20 minutes, without lifting the lid.
Add the parsley to the pot with the shredded chicken. Season with additional salt and pepper to taste.
Serve hot.
