- 2 pie crusts (homemade or store-bought)
- 2½ cups (315 grams) apples, peeled, cored, and chopped
- ¼ cup (50 grams) granulated sugar
- 2 tablespoons (15 grams) all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- ⅛ teaspoon ground nutmeg
- 1 tablespoon (15 grams) unsalted butter, optional
Prepare Pie Crusts:
Make sure the pie crusts are ⅛ inch thick by rolling them out on a lightly floured board.
Using a 3.5-inch round cutter, cut out 12 circles, re-rolling scraps as needed.
Press each circle into the cups of a standard 12-cup muffin pan, ensuring they fit snugly.
While the filling is being prepared, put the muffin tray in the refrigerator.
Make the Apple Filling:
In a large bowl, combine the chopped apples, granulated sugar, flour, ground cinnamon, vanilla extract, and ground nutmeg. Stir the apples until they're uniformly covered.
Assemble the Pies:
Remove the muffin pan from the refrigerator.
Spoon approximately 3 tablespoons of the apple filling into each pie crust.
Cut 12 little pieces of butter, if using, and put one on top of each pie.

The crusts should be golden brown and the filling should be bubbling after 16 to 18 minutes of baking in a preheated oven.
Allow the pies to cool in the muffin pan for 10 minutes before transferring to a wire rack to cool completely.
