- 4 Slices of bread
- 2 Sausages, cooked and sliced
- 1 Bell pepper, diced
- 1 Small onion, chopped
- Cherry tomatoes, halved
- 1 tbsp Olive oil
- Salt and pepper to taste
- 1/2 cup Shredded cheese (optional)
- Fresh basil for garnish
Preheat oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until soft.
Place the chopped sausages and cherry tomatoes in a pan. Cook until heated through. Season with salt and pepper.
Bread slices can be roasted till golden in the oven or toaster.
Top each slice with sausage and veggie mixture. Sprinkle with cheese if using.
After around five minutes, return to the oven until the cheese has melted.
Garnish with fresh basil and serve warm.
