Ingredients
  

  • 4 Slices of bread
  • 2 Sausages, cooked and sliced
  • 1 Bell pepper, diced
  • 1 Small onion, chopped
  • Cherry tomatoes, halved
  • 1 tbsp Olive oil
  • Salt and pepper to taste
  • 1/2 cup Shredded cheese (optional)
  • Fresh basil for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until soft.
  • Place the chopped sausages and cherry tomatoes in a pan. Cook until heated through. Season with salt and pepper.
  • Bread slices can be roasted till golden in the oven or toaster.
  • Top each slice with sausage and veggie mixture. Sprinkle with cheese if using.
  • After around five minutes, return to the oven until the cheese has melted.
  • Garnish with fresh basil and serve warm.
